Double Garlic Bone-In Ribeye

Double Garlic Bone-In Ribeye is a super easy recipe that packs a ton of flavor. We cooked these steaks on the PL Grill using my Garlic Butter and Garlic Jalapeno Rubs.

  • Get PK Grill set up for a 2 zone fire. We used Royal Oak Charcoal and GrillGrates. At the start of the cook, our GrillGrates are around 500º.
  • Coat steaks with Olive Oil to act as a binder.
  • Season steaks with Heath Riles BBQ Garlic Jalapeño Rub and then Heath Riles BBQ Garlic Butter Rub.
  • Spray GrillGrates with oil before cooking steaks, once grates are hot.
  • Place steaks on grates and allow to cook for 1 minute and 30 seconds, spin the steak at this point if you are trying to achieve good looking grill marks. Cook for another 1 minute and 30 seconds. This is a total cook time of 3 minutes on this side.
  • Flip the steak to the other side and repeat step #5.
  • Once your grill marks are in place, move your steaks to the cool zone of the fire and allow to finish cooking. Our steaks were 106º-110º at the time of moving them over.
  • We cooked our steaks to an internal temperature of approximately 120º for a medium rare. Remove from grill once desired temperature is reached.
  • Place 2 pads of salted butter on top of each steak. Cover with foil and allow to rest for approximately 10 minutes!

Brisket Stuffed Peppers on the Traeger Pellet Grill

  • Slice peppers in half and deseed them.
  • Mix shredded cheese, cream cheese and brisket together.
  • Season mixture with Heath Riles BBQ Beef Rub (to taste).
  • Stuff peppers with cream cheese mixture.
  • Wrap peppers with thin sliced bacon (we cut the package in half and used half pieces of bacon for each pepper).
  • Place stuffed peppers on a wire rack (if you choose, can be placed directly on the grill of your choice, or even in the oven).
  • Season peppers with Heath Riles BBQ Sweet Rub.
  • Place on pellet grill 350º-375º for 30-35 minutes or until bacon is done.

  • Get cooker up to 450º or desired temperature.
  • Trim any excess fat from your flat iron steak.
  • Coat steak with olive oil.

  • Place meat on cooker and cook until an internal temperature of 125º or desired doneness.

Reverse Seared Tri Tip | Golden's Cast Iron Cooker

  • Get grill up to temp of 250º-275º, we used Royal Oak Charcoal and Pecan Wood.
  • Season Tri Tip with Heath Riles BBQ Simple Citrus Rub and allow to sit for approximately 20 minutes while grill comes up to temp.
  • Season meat with Heath Riles BBQ Beef Rub before placing on the grill.
  • Put Tri Tip on cooker with heat diverter in place and insert Thermoworks ChefAlarm (if you wish) into meat until internal temperature reaches 110º.
  • Once internal temp is reached, remove heat diverter and crank up your fire to sear off the Tri Tip.
  • Sear meat until an internal temperature of 125º is reached. Remove meat from heat and allow to rest before slicing.

Garlic Butter Bacon Cheeseburger | Golden's Cast Iron Cooker

  • Make your compound butter to put back in the fridge so it can harden. Mix 1 stick of softened butter, 1 tablespoon of minced garlic & 1 tablespoon of Heath Riles BBQ Garlic Butter Rub.
  • Cook your bacon in the oven. Lay slices on a sheet pan and season with Heath Riles BBQ Hot Rub. Cook in the oven at 400º for approximately 25 minutes or until desired doneness / texture.
  • Make your burger patties and season with Heath Riles BBQ Everyday Rub & Heath Riles BBQ Garlic Butter Rub.
  • Cook on desired grill. After flipping once, start topping with compound butter mixture.
  • Allow a dollop of butter to melt and add a slice of cheddar cheese on top to melt.
  • Once burger is cooked to desired doneness, remove from heat and dress your burger as you wish.

Australian Wagyu NY Strip | PK Grill

  • Set up PK Grill for a 2 zone fire (or any charcoal grill).
  • Coat steaks with olive oil.
  • Season steaks with Heath Riles BBQ Everyday Rub & Heath Riles BBQ Beef Rub.
  • Season with black pepper if you choose.
  • Allow steaks to sit for 10 minutes with the rub on them.
  • Start the steaks on the cool side of the grill to reverse sear. Sear steaks and then move back to the cool side to finish off to an internal temperature of 125º-130º.
  • Finish steaks off with Sea Salt.

Bone-In Prime Rib Roast | PK Grill

FOR INJECTION

  • 1/2 cup Soy Sauce
  • 1/3 cup Worcestershire Sauce
  • 1.5 tablespoon Au Jus Base
  • 1 3/4 cup Beef Broth
  • 2 teaspoons of Heath Riles BBQ Everyday Rub

Instructions
 

  • Take Prime Rib Roast out of refrigerator 2 hours before seasoning / cooking to allow it to become ambient.
  • Get PK Grill (or any grill) ready for a 2 zone fire.
  • Place vegetables (onion, carrots & celery) in pan.
  • Inject prime rib roast in grid-like pattern.
  • Add remaining injection to vegetables and red wine.
  • Coat Prime Rib Roast in Olive Oil.
  • Season Prime Rib Roast with Heath Riles BBQ Beef Rub and then Killer Hogs TX Brisket Rub.
  • Place Prime Rib Roast on bed of vegetables and place on the grill.
  • Use Chef's Alarm to cook to an internal temperature of 120º.

Beef Tenderloin | Drum Smoker

CREAMY HORSERADISAH SAUCE

  • Fire up Drum Smoker or any smoker of your choice to 275º-300º.
  • Coat beef tenderloin with a light coat of olive oil.
  • Season beef tenderloin with Heath Riles BBQ Garlic Butter Rub.
  • Season beef tenderloin with Heath Riles BBQ Beef Rub.
  • Season beef tenderloin with salt and pepper.
  • Once smoker is up to temperature, place beef tenderloin on. We used a Chef's Alarm set at 125º.
  • After cooking for 30 minutes, roll tenderloin over on smoker. Continue to roll every 30 minutes while beef tenderloin cooks.
  • Remove beef tenderloin once it reaches an internal temperature of 125º. Let it rest while loosely covered with foil for 15-20 minutes.
  • Make your horseradish sauce if you plan to (recipe above).

Brisket Potato Bombs | Pellet Grill

  • Left Over Brisket chopped, approximately 1.5-2 cups
  • 2 Baking Potatoes
  • Heath Riles BBQ Beef Rub
  • Killer Hogs TX Brisket Rub
  • Olive Oil
  • Stick Butter optional
  • Shredded Cheese optional
  • Sour Cream optional
  • Beef Broth approximately 2 cups total
  • 1 cup diced onion
  • 2 tbsp All Purpose Flour
  • Green onion optional

Instructions
 

  • Get pellet grill (or any smoker) up to 450º, we used Hickory pellets.
  • Coat baking potatoes with olive oil and Killer Hogs TX Brisket Rub.
  • Cook potatoes for 1.5 hour on pellet grill. Have your cast iron skillet heating up while potatoes are cooking.
  • Remove potatoes after 1.5 hours, allow them to be cooling.
  • Add 2 pads of butter and 1 cup of diced onion to heated cast iron skillet. Season with Heath Riles BBQ Beef Rub. Sauté until translucent, approximately 5 minutes.
  • Whisk 2 tbsp of all purpose flour and 1/2 cup of beef broth to make "slurry" mixture.
  • Add chopped brisket to the onions and butter in the cast iron skillet, cook for approximately 3-4 minutes.
  • Add 1-1.5 cup of beef broth and slurry mixture to skillet.
  • Cook an additional 10-15 minutes until gravy mixture if formed.
  • Build your potatoes as you wish! We added mixture to ours with cheese and then put back on the grill to melt the cheese. Add chives if you wish once off of the grill.

Brisket | Pellet Grill

Brisket on the Traeger Pellet Grill

Ingredients for Spritz

  • Get pellet grill up to 275º, we used pecan pellets.
  • Trim brisket to your liking.
  • Season brisket with Heath Riles BBQ Everyday Rub, Beef Rub & Pecan Rub on both sides.
  • Cook at 275º for 3 hours and then start spritzing (recipe above) every hour until the brisket bark is formed and the brisket reaches an internal temperature of 160º-170º.
  • Once your internal temperature of 160º-170º is reached, wrap your brisket with 1 cup of spritz mixture.
  • Increase grill temperature to 325º.
  • Cook brisket until an internal temperature of 202º is reached or until the brisket feels like soft butter.
  • Once brisket is done cooking, rest for 30 minutes to 1 hour before slicing.
  • **Remember every piece of meat is different, finishing temps will vary. Always go by feel.
