  • Mix 1/4 cup of pork injection with 12 oz of apple juice to get ready to inject. You can use any liquid of your choice, we just prefer apple juice.
  • Use a grid-like pattern to inject butt.
  • Score fat on butt, we are cooking fat side up.
  • Season butt with Heath Riles BBQ Honey Chipotle Rub on all sides. Allow rub to sweat in for 15-20 minutes.
  • Put on Traeger Grill (or smoker / grill of your choice) fat side up at 225º. We used Royal Oak Pellets for this cook.
  • Cook butt for approximately 8 hours at 225º. Our butt was approximately 160º at this point.
  • Remove butt to wrap with Butter Bath (1/4 cup) and Apple Juice (8 oz.). Wrap foil tightly.
  • Return to grill, we set our probe to 200º.
  • We turned our temperature up to 275º and cooked for another 2 hours.
  • We had a total cook time of 10 hours, our butt had an internal temperature of 200º when we took it off of the grill.
  • Allow butt to rest for 1-2 hours.

  • Get grill up to temperature, our goal was to cook at 250º but our cooker ranged from 235º-250º during our cook.
  • Trim butt if you wish.
  • Mix pork injection and apple juice using a blender cup or an actual blender. You will need 1/4 cup of Heath Riles BBQ Pork Injection & Brine and 12 oz of apple juice PER BUTT.
  • Inject butt using a grid-like pattern.
  • Apply mustard or binder of your choice to butt.
  • Season with Heath Riles BBQ Hot BBQ Rub and then with Heath Riles BBQ Peach Rub.
  • Place your butt on your cooker fat side up. For this cook, we used the Goldens' Cast Iron Cooker with our place setter inside. Our grill was at 250º.
  • Put in your ChefAlarm if you wish.
  • Our butt cooked for 9 hours and we pulled it at about 202º-203º.
  • Remove butt from cooker and wrap with Heath Riles BBQ Tangy Vinegar Sauce and foil.
  • Allow butt to rest while wrapped for about 1 hour.

Boston Butt | Pellet Grill

One of the signature BBQ dishes is the Boston Butt, in this recipe we are going to smoke our Boston Butt on the Traegar Pellet Grill with our Competition Pork Bundle.

  • Trim fat caps down to 1/4 an inch or less, trim some fat off of the money muscle if you wish, trim any bone fragment off of the butts
  • Mix Heath Riles BBQ Pork Injection with apple juice (1/4 cup of injection to 12 ounces of apple juice for EACH but)
  • Inject each butt using a grid / checkerboard pattern all over (front, back & sides)
  • Apply yellow mustard or other binder of choice
  • Coat butts with a light layer of Heath Riles BBQ Everyday Rub all over
  • Apply a light layer of Heath Riles BBQ Pecan Rub all over
  • Apply a light layer of Heath Riles BBQ Peach Rub all over
  • Apply a layer of Heath Riles BBQ Honey Rub all over (Honey for the Money!)
  • Place butts in small pans (if you wish) with fat cap side up. Place butts on Traeger (or any pellet grill or smoker of your choice) at 275º (we used Hickory pellets)
  • Cook butts at 275º for approximately 2.5 hours and then spritz with apple juice. Cook an additional 2-2.5 hours (until butts are 150º-160º internally).
  • Mix 1 cup of Heath Riles BBQ Sweet BBQ Sauce and 1 cup of Heath Riles BBQ Tangy Vinegar BBQ Sauce together. Pour 1 cup over each butt after mixing sauce up good.
  • Wrap butts with aluminum foil and place back on the grill / smoker (we set a Chef's Alarm for 200º so we would know once they were done).
  • Once internal temperature of 200º is reached, take butts off of cooker and let them rest for 1-1.5 hours.
  • Enjoy!
