  • Brine wings overnight, use 1/4 cup of Heath Riles BBQ Chicken Injection & Brine mixed with 16 oz of Chicken Stock
  • Get Traeger up to temp, we used Royal Oak 100% Charcoal Hardwood Pellets and cooked at 300º.
  • Dry wings well and place them on a rack if you wish.
  • Spray wings with Duck Fat Spray
  • Season wings with Heath Riles BBQ Chicken Rub and then Heath Riles BBQ Cajun Creole Garlic Butter Rub.
  • Flip wings and repeat steps 3-4 on other side.
  • Put wings on the Traeger Grill for approximately 1 hour or until the internal temperature is 190º-195º.
  • Mix a 50/50 blend of Heath Riles BBQ Sweet BBQ Sauce and Heath Riles BBQ Tangy Vinegar BBQ Sauce, we used approximately 1/4 cup of each sauce.
  • Toss wings in sauce mixture.
  • We then placed the wings on our Goldens' Cast Iron Cooker to get some char. We flipped them often to get equal char on both sides for a total of about 10 minutes.

Smoked Buffalo Chicken Dip

Smoked Buffalo Chicken Dip on the Goldens' Cast Iron Cooker

  • Mix shredded chicken, 3/4 cup TRUFF Hot Sauce, 1 package Cream Cheese, 1 cup Ranch Dressing, 1 cup of Shredded Cheese, 1 tbsp Chicken Rub, 1 tbsp Garlic Jalapeño Rub in a large bowl.
  • Once mixed well, place in cast iron skillet or baking dish of your choice.
  • Top with remaining 1 cup of Shredded Cheese.
  • Cook on grill at 275º-300º for approximately 30-40 minutes or until bubbly and cheese on top is melted.

Spatchcock Chicken | Gateway Drum Smoker

Spatchcock Whole Chicken with an Alabama White Sauce cooked on the Gateway Drum

Alabama White Sauce Ingredients

  • 2 cups Mayo
  • 1/2 cup Apple Cider Vinegar
  • 1/8 cup prepared Horseradish
  • 2 tbsp fresh Lemon Juice
  • 1 1/2 tsp freshly ground Black Pepper
  • 2 tsp spicy Mustard
  • 1 tbsp Heath Riles BBQ Garlic Jalapeño Rub
  • 1 tbsp Sugar

Instructions
 

  • Remove chicken from packaging, dry off.
  • Cut out the backbone of the chicken to spatchcock.
  • Remove the innards of the chicken.
  • Coat the chicken in olive oil.
  • Season chicken with Heath Riles BBQ Chicken Rub and Heath Riles BBQ Pecan Rub or seasoning of your choice.
  • Put chicken on the cooker, we used the Gateway Drum Smoker and cooked at 300º.
  • Flip chicken at the one hour mark and check the temperature, ours was around 130º.
  • Flip chicken again after 30 minutes and pull at 160º-165º.
  • Allow chicken to rest. Top with Alabama White Sauce if you wish, recipe above.

Whole Chicken Wings on the Goldens' Cast Iron Cooker

  • Set up grill for a 2-zone fire. Our goal temperature was 250º-300º.
  • Coat chicken wings in olive oil.
  • Season chicken wings with Heath Riles BBQ Chicken Rub.
  • Season chicken wings with Heath Riles BBQ Honey Rub.
  • Put wings on the grill and sprinkle another light coat of Heath Riles BBQ Chicken Rub and Heath Riles BBQ Honey Rub.
  • After wings have been cooking for approximately 20 minutes, flip the wings.
  • After being on the grill for approximately 35 minutes, our wings were around 170º-175º. Brush the wings with Heath Riles BBQ Sweet BBQ Sauce. Allow sauce to get sticky on the wings.
  • Move wings to the cool side of the grill once they are sauced and allow them to get some char on them.
  • We took our wings off at an internal temperature of 185º-190º. We had a total cook time of about 45 minutes.

Smoked Honey Sriracha Wings | Drum Smoker

These wings are something that can't be described, a honey Sriracha flavor smoked on the Drum.

  • Take wings out of package and dry off with a paper towel and place on a pan or rack in the refrigerator to dry off good for 2-3 hours.
  • Light Drum Smoker (or any smoker), bring to a temperature of 275º-300º
  • Rub wings with olive oil, coat with Heath Riles BBQ Everyday Rub (repeat this step on both sides)
  • Coat back of wings with Heath Riles BBQ Honey Rub and allow to sit for about 5 minutes. Turn wings over and coat front of wings with Honey Rub.
  • Place wings on the smoker for 20 minutes. After 20 minutes, rotate the rack and cook for an additional 10 minutes.
  • Flip wings over to other side, cook for 20 minutes. Start checking the temperature of your wings. You want the internal temperature to be 185º at least.
  • Take wings off and brush with sauce on both sides. Place back on the smoker for about 5 minutes.

Roasted Garlic & Herb Chicken | Pellet Grill

This is a wonderful roasted Garlic and Herb whole chicken smoked on the Traegar Pellet Grill. It's one of my absolute favorite recipes.

  • Make compound butter (ingredients above).
  • Heat Traeger (or any pellet grill) to 325º, we used Pecan Pellets for this recipe.
  • Grease / oil sheet pan.
  • Season and rub compound butter on chicken.
  • Toss vegetables in olive oil and Everyday Rub, Simple Citrus Rub & Garlic Butter Rub
  • Place chicken in center of pan, place vegetables around chicken.
  • Place on pellet grill and cook until chicken breasts are 165º internally (about 2 hours)
  • ENJOY!

Smoked BBQ Carnitas Tacos | Pellet Grill

We took our own spin on Smoked BBQ Carnitas Tacos using some of our signature rubs all on the Traegar Pellet Grill with pitmaster Heath Riles

  • Cube pork butt into small pieces
  • Cook on Traeger (or grill of your choice) at 300º for 1.2-2 hours
  • Add cubed pork to a bed of sliced onions and peppers, add chicken stock and Heath Riles BBQ Tangy Vinegar Sauce.
  • Braise for 1 hour and check for tenderness. Once meat is tender, let it rest for 20-30 minutes and then shred for tacos.
  • Build your taco to your liking. ENJOY!

Classic BBQ Chicken | Pellet Grill

This is a classic BBQ Chicken meal using our signature rubs and sauces all cooked up on the Traegar Pellet Grill

  • Cut chicken into pieces if you desire, places chicken pieces in the refrigerator to dry
  • Season chicken on both sides with Heath Riles BBQ Everyday Rub & Heath Riles BBQ Sweet Rub
  • Place pieces on the Traeger Pellet Grill (or grill of your choice) for 45 minutes at 250º
  • Baste chicken with Heath Riles BBQ Tangy Vinegar Sauce every 30 minutes until chicken temperature reaches 155º in the breasts and 165º in legs, wings & thighs.
  • Remove chicken from grill, increase grill temperature to 450-500º baste with Heath Riles BBQ Sweet Sauce and return to the grill for 10-15 minutes to set sauce and for chicken breasts to reach 165º.

Smoked Wings 2 Ways | Pellet Grill

Smoked Wings 2 Ways: Cherry Black Pepper Wings with a Sweet and Spicy Tangy Vinegar BBQ Sauce & Crispy Garlic Butter Wings with a Kinda White Alabama BBQ Sauce with Heath Riles

  • Dry off chicken wings with paper towels. (For best results, air dry wings on a rack and sheet pan in the fridge for at least 1 hour) Separate wings, half for Cherry Black Pepper Wings and half for Crispy Garlic Butter Wings.
  • Mix rub and cornstarch separately for each set of wings. Cherry Rub, Black Pepper and cornstarch in one bag; Garlic Butter Rub and cornstarch in the other bag.
  • Place wings in bags and shake to evenly coat. (If you do not wish to shake in bags, you can season both sides while shaking rub on, etc...)
  • Fire up Traeger grill (or any pellet grill) to 375º F and preheat for approximately 20 minutes.
  • Once grill is hot and preheated, cook wings for 45 minutes flipping half way through.
  • For Sweet and Spicy Tangy Vinegar Sauce, mix 1 cup of Heath Riles BBQ Tangy Vinegar Sauce & 1/2 cup of honey
  • For Kinda White Alabama BBQ Sauce, mix 1 cup of mayo, 1/4 cup of Heath Riles BBQ Tangy Vinegar Sauce, 1 tsp lemon juice, 1 tsp prepared horseradish, 1/2 tsp Heath Riles BBQ Garlic Jalapeño Rub & 1/2 tsp black pepper.
  • Toss Cherry Wings in the Sweet and Spicy Tangy Vinegar BBQ Sauce (return to the grill to char if you wish)
  • Toss Garlic Butter Wings in the Kinda White Alabama BBQ Sauce (or drizzle over if you wish)
