  • Brine wings overnight, use 1/4 cup of Heath Riles BBQ Chicken Injection & Brine mixed with 16 oz of Chicken Stock
  • Get Traeger up to temp, we used Royal Oak 100% Charcoal Hardwood Pellets and cooked at 300º.
  • Dry wings well and place them on a rack if you wish.
  • Spray wings with Duck Fat Spray
  • Season wings with Heath Riles BBQ Chicken Rub and then Heath Riles BBQ Cajun Creole Garlic Butter Rub.
  • Flip wings and repeat steps 3-4 on other side.
  • Put wings on the Traeger Grill for approximately 1 hour or until the internal temperature is 190º-195º.
  • Mix a 50/50 blend of Heath Riles BBQ Sweet BBQ Sauce and Heath Riles BBQ Tangy Vinegar BBQ Sauce, we used approximately 1/4 cup of each sauce.
  • Toss wings in sauce mixture.
  • We then placed the wings on our Goldens' Cast Iron Cooker to get some char. We flipped them often to get equal char on both sides for a total of about 10 minutes.

Game-day Italian Sausages & Peppers

Game-day Italian Sausages & Peppers on the PK Grill

Ingredients
  

  • Louie's P & R Italian Sausages we used 1 pkg of Italian & 1 pkg of Salameat
  • Heath Riles BBQ Garlic Butter Rub
  • Heath Riles BBQ Everyday Rub
  • 1 Red Bell Pepper sliced (we sliced into thin strips)
  • 2 Green Bell Peppers sliced (we sliced into thin strips)
  • 2 onions sliced (we sliced into thin slices)
  • 1 can of Beer of your choice we used original Budweiser
  • Olive Oil
  • Buns of your choice if you plan to make sandwiches

Instructions
 

  • Set grill up for 2 zone grilling, we used our PK for this cook.
  • Remove sausages from package, poke holes in sausages.
  • Place cast iron skillet on the hot side of the grill, oil with Olive Oil. Add sliced peppers and onions.
  • Season peppers and onions with Garlic Butter Rub and Everyday Rub.
  • Allow vegetables to sauté for approximately 5 minutes.
  • Add approximately 16 oz of Beer to the peppers and onions.
  • Add sausages on top of onion & pepper mixture in skillet and season with more Garlic Butter Rub and Everyday Rub. Allow to cook for approximately 15 minutes.
  • Turn sausages approximately halfway though (7-8 minutes).
  • Move skillet to the cooler side of the grill.
  • Remove sausages from skillet and place on the hot side of the grill to get some char.
  • Once you have as much char on your sausages as you would like, remove all items from the grill.
  • Make Italian Sausage & Pepper Sandwiches to your liking!!

Cajun Creole Garlic Butter Baby Back Ribs

  • Remove ribs from packaging. Remove membrane from ribs and trim to your liking.
  • We used water as a binder for these ribs, spray lightly with water before seasoning.
  • Season back side of ribs with Everyday Rub and then Cajun Creole Garlic Butter Rub.
  • Flip ribs and repeat steps 2-3.
  • Put ribs on the grill, we cooked at 300º for approximately 2 hours, or until your ribs can pass the smear test.
  • Remove ribs from grill and wrap each slab with Butter Bath (1/4 cup Butter Bath to 3/4 cup of Apple Juice PER SLAB).
  • Return ribs to the grill for approximately 1 hour or until internal temperature is around 203º-206º.
  • Remove ribs from grill and unwrap and remove from Butter Bath mixture.
  • Season ribs with more Cajun Creole Garlic Butter Rub and return to the grill.
  • 10.Allow to cook for approximately 15-20 minutes or until ribs appear to have dried on the outside.

Cherry Dr. Pepper Ribs | Pellet Grill

  • Get pellet grill (or grill of choice) up to 250º, we used the new Royal Oak Charcoal Pellets for this cook.
  • Trim ribs to your liking.
  • Apply binder to rib if you wish, we used yellow mustard.
  • Season back side of rib with a light to medium coat of Heath Riles BBQ Hot BBQ Rub.
  • Season back side of rib with Heath Riles BBQ Cherry Rub.
  • Allow rib to rest / sweat for 10 minutes on this side.
  • Repeat steps 3-6 for front side of the ribs.
  • Place ribs on the grill and allow to cook for 2 hours.
  • After 2 hour mark, spritz with Dr. Pepper.
  • Allow ribs to cook an additional hour (total of 3 hours at this point) and remove to wrap with Heath Riles BBQ Butter Bath.
  • Wrap each slab of rib with Heath Riles BBQ Butter Bath mixture (1/4 cup of Butter Bath to 3/4 cup of Apple Juice per slab of ribs).
  • Return wrapped ribs to grill for about another hour and a half or until you get a temperature of around 204º-206º.
  • Remove ribs from grill once desired temperature is reached and allow them to rest for at least 10 minutes.
  • Once rested, brush both sides of the ribs with Dr. Pepper Sweet BBQ Sauce. For this sauce we just reduced 12 oz of Dr. Pepper down over heat and mixed with 1/2 bottle of Heath Riles BBQ Sweet BBQ Sauce.
  • Return sauced ribs to the grill for 20-30 minutes to allow sauce to set.

  • Set up grill for a 2 zone fire, we used our PK 360.
  • Trim meat to your liking.
  • Coat steak in olive oil.
  • Season steak with Heath Riles BBQ Everyday Rub and Killer Hogs TX Brisket Rub.
  • Spray grates on grill with spray (olive oil, Pam, whatever you wish...)
  • Put steak on grill and allow to cook for a minute and a half.
  • Flip steak after a minute and a half and then flip. Continue this process until you have your desired grill marks. We did this process for about 7 minutes until we moved our steak over to the cool zone.
  • Move steak to cool side of the grill, place a ChefAlarm in if you wish and set to 120º or desired temperature.
  • Once steak is finished, remove from grill and allow to rest.
  • Place pads of butter on resting steak and loosely cover while resting. Allow to rest for about 15 minutes.

  • Get grill up to temperature, our goal was to cook at 250º but our cooker ranged from 235º-250º during our cook.
  • Trim butt if you wish.
  • Mix pork injection and apple juice using a blender cup or an actual blender. You will need 1/4 cup of Heath Riles BBQ Pork Injection & Brine and 12 oz of apple juice PER BUTT.
  • Inject butt using a grid-like pattern.
  • Apply mustard or binder of your choice to butt.
  • Season with Heath Riles BBQ Hot BBQ Rub and then with Heath Riles BBQ Peach Rub.
  • Place your butt on your cooker fat side up. For this cook, we used the Goldens' Cast Iron Cooker with our place setter inside. Our grill was at 250º.
  • Put in your ChefAlarm if you wish.
  • Our butt cooked for 9 hours and we pulled it at about 202º-203º.
  • Remove butt from cooker and wrap with Heath Riles BBQ Tangy Vinegar Sauce and foil.
  • Allow butt to rest while wrapped for about 1 hour.

  • Get your grill up to temperature. (Our Golden's Cast Iron was approximately 510º when we put our porterhouse on.)
  • Spray porterhouse and poblano peppers with Duck Fat Spray (or any spray of your choice).
  • Season porterhouse steak and poblano peppers with Heath Riles BBQ Simple Citrus Rub and Heath Riles BBQ Garlic Jalapeño Rub.
  • Allow the rub to sweat into the meat while your grill comes up to temperature.
  • Spray the grates on your grill with Duck Fat Spray or spray of your choice.
  • Place your porterhouse (or any cut of steak) and poblano peppers on the grill. Cook for 1 and a half minutes and then flip. Cook for another minute and a half and flip again. Continue to flip every minute and a half until an internal temperature of 124º-125º is reached. Once temperature is achieved, remove from the grill.
  • Allow your steak to rest before cutting into it.

  • Get Traeger Pellet Grill (or any grill) up to a temperature of 325º. We used Cherry pellets for this cook.
  • Trim pork loin if desired. We cut our loin in half and scored it.
  • Apply binder of your choice, we used mustard.
  • Season with Heath Riles BBQ Peach Rub all over and then season with Heath Riles BBQ Honey Chipotle.
  • Allow pork loin to rest for 15-20 minutes before putting on the grill. When ready to put on the grill, we placed a ThermoWorks DOT in and set it to 140º.
  • Cook loin for one hour and then glaze with Heath Riles BBQ Sweet BBQ Sauce and season with more Honey Chipotle Rub.
  • Continue cooking until internal temperature reaches 140º. Our total cook time for this was 1 hour and 30 minutes.

Boston Butt (Pulled Pork Sandwich) | Outlaw Smoker

  • Trim Boston Butt to your liking, we did not trim much off of this and we left the fat cap on.
  • Put binder on butt, we used yellow mustard.
  • Season butt with Heath Riles BBQ Pecan Rub and then Heath Riles BBQ Sweet BBQ Rub. (You can purchase both of these rubs in the Sweet & Savory Flavor Fusion Bundle on our website)
  • Get smoker up to temperature, we cooked at 275º and used Royal Oak Charcoal and Hickory wood for this cook.
  • Place butt on smoker fat side up and cook to approximately 140º, this was about 3 and a half hours for us. We did spritz our butt about every hour with water (you can use apple juice or whatever liquid you prefer).
  • Once butt reaches 140º we wrapped with our Heath Riles BBQ Tangy Vinegar Sauce and foil and placed this back on the smoker.
  • Cook butt to an internal temperature of 200º, this was another 2 and a half hours for us. Total cook time was 6 hours.
  • Allow cooked butt to rest for 1 hour.
  • Make coleslaw (recipe above) if you plan to make delicious pulled pork sandwiches!
  • Shred your meat and top with Garlic Jalapeño Coleslaw and Tangy Vinegar Sauce on your bun! Enjoy this deliciousness!

  • Skewer shrimp.

  • Place shrimp on the grill. We cooked for approximately 3 minutes on each side and they were done.
  • Remove from grill when done.
