  • Brine wings overnight, use 1/4 cup of Heath Riles BBQ Chicken Injection & Brine mixed with 16 oz of Chicken Stock
  • Get Traeger up to temp, we used Royal Oak 100% Charcoal Hardwood Pellets and cooked at 300º.
  • Dry wings well and place them on a rack if you wish.
  • Spray wings with Duck Fat Spray
  • Season wings with Heath Riles BBQ Chicken Rub and then Heath Riles BBQ Cajun Creole Garlic Butter Rub.
  • Flip wings and repeat steps 3-4 on other side.
  • Put wings on the Traeger Grill for approximately 1 hour or until the internal temperature is 190º-195º.
  • Mix a 50/50 blend of Heath Riles BBQ Sweet BBQ Sauce and Heath Riles BBQ Tangy Vinegar BBQ Sauce, we used approximately 1/4 cup of each sauce.
  • Toss wings in sauce mixture.
  • We then placed the wings on our Goldens' Cast Iron Cooker to get some char. We flipped them often to get equal char on both sides for a total of about 10 minutes.

  • Mix shredded chicken, 3/4 cup TRUFF Hot Sauce, 1 package Cream Cheese, 1 cup Ranch Dressing, 1 cup of Shredded Cheese, 1 tbsp Chicken Rub, 1 tbsp Garlic Jalapeño Rub in a large bowl.
  • Once mixed well, place in cast iron skillet or baking dish of your choice.
  • Top with remaining 1 cup of Shredded Cheese.
  • Cook on grill at 275º-300º for approximately 30-40 minutes or until bubbly and cheese on top is melted.

  • Get grill up to 500º or temperature of your choice.
  • Spray steaks with Duck Fat Spray or any binder of choice.
  • Season steaks with Heath Riles BBQ Garlic Jalapeño Rub.
  • Allow steaks to sit for about 10 minutes after seasoning them.
  • Spray grates on the grill with Duck Fat Spray or any oil of your choice.
  • Place steaks on the grill.
  • Cook for 1 and a half minutes and then flip, repeat and flip again. Continue this process until you achieve the grill marks you are looking for.
  • Move to the cooler zone of the grill when you get your grill marks (our internal temperature was about 110º when we moved to the cool side).
  • Allow steak to cook to desired temperature. We went to about 120º-123º for a medium rare temperature.
  • Remove steak from grilll and allow to rest for about 10 minutes before cutting.
  • Salt if desired.

  • Set up grill for a 2-zone fire. Our goal temperature was 250º-300º.
  • Coat chicken wings in olive oil.
  • Season chicken wings with Heath Riles BBQ Chicken Rub.
  • Season chicken wings with Heath Riles BBQ Honey Rub.
  • Put wings on the grill and sprinkle another light coat of Heath Riles BBQ Chicken Rub and Heath Riles BBQ Honey Rub.
  • After wings have been cooking for approximately 20 minutes, flip the wings.
  • After being on the grill for approximately 35 minutes, our wings were around 170º-175º. Brush the wings with Heath Riles BBQ Sweet BBQ Sauce. Allow sauce to get sticky on the wings.
  • Move wings to the cool side of the grill once they are sauced and allow them to get some char on them.
  • We took our wings off at an internal temperature of 185º-190º. We had a total cook time of about 45 minutes.

  • Get grill up to temperature, our goal was to cook at 250º but our cooker ranged from 235º-250º during our cook.
  • Trim butt if you wish.
  • Mix pork injection and apple juice using a blender cup or an actual blender. You will need 1/4 cup of Heath Riles BBQ Pork Injection & Brine and 12 oz of apple juice PER BUTT.
  • Inject butt using a grid-like pattern.
  • Apply mustard or binder of your choice to butt.
  • Season with Heath Riles BBQ Hot BBQ Rub and then with Heath Riles BBQ Peach Rub.
  • Place your butt on your cooker fat side up. For this cook, we used the Goldens' Cast Iron Cooker with our place setter inside. Our grill was at 250º.
  • Put in your ChefAlarm if you wish.
  • Our butt cooked for 9 hours and we pulled it at about 202º-203º.
  • Remove butt from cooker and wrap with Heath Riles BBQ Tangy Vinegar Sauce and foil.
  • Allow butt to rest while wrapped for about 1 hour.

  • Get your grill up to temperature. (Our Golden's Cast Iron was approximately 510º when we put our porterhouse on.)
  • Spray porterhouse and poblano peppers with Duck Fat Spray (or any spray of your choice).
  • Season porterhouse steak and poblano peppers with Heath Riles BBQ Simple Citrus Rub and Heath Riles BBQ Garlic Jalapeño Rub.
  • Allow the rub to sweat into the meat while your grill comes up to temperature.
  • Spray the grates on your grill with Duck Fat Spray or spray of your choice.
  • Place your porterhouse (or any cut of steak) and poblano peppers on the grill. Cook for 1 and a half minutes and then flip. Cook for another minute and a half and flip again. Continue to flip every minute and a half until an internal temperature of 124º-125º is reached. Once temperature is achieved, remove from the grill.
  • Allow your steak to rest before cutting into it.

Picanha | Goldens' Cast Iron Cooker

Chimichurri Ingredients / Recipe:

  • 4-5 cloves of chopped / minced Garlic
  • 1/2 cup of chopped Parsley
  • 1 whole small finely diced Red Chili
  • 1/2 cup of Olive Oil
  • 2 tbsp of Red Wine Vinegar
  • 2 tbsp of chopped Oregano
  • 1 tbsp of Honey
  • Salt & Pepper to taste

Instructions
 

  • Trim meat to your liking. We didn't trim much off of this piece of meat!
  • Season Picanha with Heath Riles BBQ Hot Rub or rub of your choice.
  • Salt and pepper to your preference.
  • Allow meat to sit for 20 minutes while you get your grill up to temp and set up for a 2 zone cook!
  • Place meat on the cool side (away from the fire) of the grill and insert your ChefAlarm and set to 110º.
  • Once your meat reaches an internal temperature of 110º, move to the hot side and sear until you reach 125º.

  • Get grill up to approximately 400º.
  • Skewer shrimp.
  • Squeeze half of a fresh lime on shrimp. Season with Heath Riles BBQ Simple Citrus Rub & Heath Riles BBQ Honey Chipotle Rub. Flip to other side and repeat.
  • Place shrimp on the grill. We cooked for approximately 3 minutes on each side and they were done.
  • Remove from grill when done.

Grilled Scallops | Golden's Cast Iron Cooker

These Grilled scallops we cook just a little bit different, in a Cast Iron skillet. We use our Garlic Butter and the Simple Citrus rubs with these scallops and they turned out amazing.

  • DIRECTIONS:
  • Get Golden's Cast Iron Cooker (or cooker of your choice) up to 450º-500º.
  • Toss Scallops in olive oil.
  • Season scallops with Heath Riles BBQ Garlic Butter Rub and then Heath Riles BBQ Simple Citrus Rub. Repeat this process on both sides.
  • Place cast iron griddle on the grill with some olive oil and 2 tbsp of butter to get hot..
  • Once griddle is hot, place scallops on. Once they are golden brown, flip to the other side. This should be approximately 3-4 minutes per side.
  • Scallops are done when they reach 125º-130º internally.

  • Place meat on cooker and cook until an internal temperature of 125º or desired doneness.
