  • Get grill up to approximately 400º.
  • Skewer shrimp.
  • Squeeze half of a fresh lime on shrimp. Season with Heath Riles BBQ Simple Citrus Rub & Heath Riles BBQ Honey Chipotle Rub. Flip to other side and repeat.
  • Place shrimp on the grill. We cooked for approximately 3 minutes on each side and they were done.
  • Remove from grill when done.
  • Squeeze more fresh lime juice on your shrimp.

Grilled Scallops | Golden's Cast Iron Cooker

These Grilled scallops we cook just a little bit different, in a Cast Iron skillet. We use our Garlic Butter and the Simple Citrus rubs with these scallops and they turned out amazing.

  • DIRECTIONS:
  • Get Golden's Cast Iron Cooker (or cooker of your choice) up to 450º-500º.
  • Toss Scallops in olive oil.
  • Season scallops with Heath Riles BBQ Garlic Butter Rub and then Heath Riles BBQ Simple Citrus Rub. Repeat this process on both sides.
  • Place cast iron griddle on the grill with some olive oil and 2 tbsp of butter to get hot..
  • Once griddle is hot, place scallops on. Once they are golden brown, flip to the other side. This should be approximately 3-4 minutes per side.
  • Scallops are done when they reach 125º-130º internally.

Flat Iron Steak | Golden's Cast Iron Cooker

Flat Iron Steak on the Golden's Cast Iron Cooker

  • Get cooker up to 450º or desired temperature.
  • Trim any excess fat from your flat iron steak.
  • Coat steak with olive oil.
  • Apply a coat of Heath Riles BBQ Everyday Rub.
  • Apply a coat of Heath Riles BBQ Hot Rub.
  • Place meat on cooker and cook until an internal temperature of 125º or desired doneness.

Reverse Seared Tri Tip | Golden's Cast Iron Cooker

Wagyu Reverse Seared Tri Tip on the Golden's Cast Iron Cooker

  • Get grill up to temp of 250º-275º, we used Royal Oak Charcoal and Pecan Wood.
  • Season Tri Tip with Heath Riles BBQ Simple Citrus Rub and allow to sit for approximately 20 minutes while grill comes up to temp.
  • Season meat with Heath Riles BBQ Beef Rub before placing on the grill.
  • Put Tri Tip on cooker with heat diverter in place and insert Thermoworks ChefAlarm (if you wish) into meat until internal temperature reaches 110º.
  • Once internal temp is reached, remove heat diverter and crank up your fire to sear off the Tri Tip.
  • Sear meat until an internal temperature of 125º is reached. Remove meat from heat and allow to rest before slicing.

Garlic Butter Bacon Cheeseburger | Golden's Cast Iron Cooker

  • Make your compound butter to put back in the fridge so it can harden. Mix 1 stick of softened butter, 1 tablespoon of minced garlic & 1 tablespoon of Heath Riles BBQ Garlic Butter Rub.
  • Cook your bacon in the oven. Lay slices on a sheet pan and season with Heath Riles BBQ Hot Rub. Cook in the oven at 400º for approximately 25 minutes or until desired doneness / texture.
  • Make your burger patties and season with Heath Riles BBQ Everyday Rub & Heath Riles BBQ Garlic Butter Rub.
  • Cook on desired grill. After flipping once, start topping with compound butter mixture.
  • Allow a dollop of butter to melt and add a slice of cheddar cheese on top to melt.
  • Once burger is cooked to desired doneness, remove from heat and dress your burger as you wish.
  • ENJOY!

Grilled Venison Tenderloin | Golden's Cast Iron Cooker

FOR MARINADE:

  • 1/3 cup Worcestershire Sauce
  • 1/3 cup Soy Sauce
  • 1/3 cup Balsamic Vinegar
  • 1/4 cup Olive Oil
  • 2 tablespoons Minced Garlic
  • 1 tablespoon Coarse Ground Black Pepper
  • 1 tablespoon Heath Riles BBQ Garlic Butter Rub

FOR RED WINE MUSHROOM CREAM SAUCE:

  • 1 small container fresh sliced Mushrooms
  • 1 tablespoon Minced Garlic
  • 3/4 cup Red Wine
  • 1/2 cup Heavy Whipping Cream
  • 2 tablespoons butter

Instructions
 

  • Trim venison tenderloin and cut into medallions.
  • Make marinade (ingredients above) and allow meat to marinate for a minimum of 4 hours. It is ok to marinate overnight or up to 24 hours.
  • Once ready to grill, get grill up to temp. Our Golden's Cast Iron Cooker was around 450º-500º.
  • While grill is heating up, take medallions out of marinade and season with Heath Riles BBQ Hot Rub and Heath Riles BBQ Simple Citrus Rub on both sides.
  • Get ingredients ready for Red Wine Mushroom Cream Sauce if you plan to cook on the grill like Heath did. We cooked this sauce in a cast iron skillet.
  • Cook medallions on grill until an internal temperature of 125º-130º is reached. Remove from heat.
  • Make Red Wine Mushroom Cream Sauce if you wish. Allow medallions to rest for at least 10 minutes before eating.
  • Once your sauce is done and your meat is rested, ENJOY!

Double-Cut Bone-In Pork Chop | Golden's Cast Iron Cooker

Reverse Seared Double-Cut Bone-In Pork Chop with Tangy Vinegar, Orange Marmalade Glaze with Heath Riles

  • Remove bone-in loin from package and dry off moisture, cut 2" thick chops from bone-in loin if cutting on your own, if not, you already have your cut pork chops from your local butcher
  • Apply binder to meat, in the video we used grapeseed oil
  • Season chops with a light layer of Heath Riles BBQ Everyday Rub on all sides
  • Season chops with a heavy layer of Heath Riles BBQ Honey Chipotle Rub on all sides
  • Let chops sit for about 20 mins while you get your grill ready
  • Get Golden's Cast Iron cooker (or the grill of your choice) up to about 225° using Royal Oak Charcoal, remember to set up for a 2 zone fire to reverse sear
  • Once your cooker is up to temp, add a piece of wood if you choose (we used hickory wood)
  • Put chops on cooker, remember to put them on the cool side in order to get the smoke going before searing
  • Flip chops after about 20-25 minutes or once they reach about 90° cook them for another 20-25 minutes until they reach 125°
  • Make glaze, 1 cup of Heath Riles BBQ Tangy Vinegar sauce and 1 cup of orange marmalade, reduce down to form a glaze
  • Once your chops are 120-125°, remove them and crank your fire up to 500-550° to sear them.
  • Glaze chops with sauce/marmalade reduction before putting back on grill.
  • Put chops on to sear flipping after a couple of minutes to get your chops to an internal temp of 145-150°
