Game-day Italian Sausages & Peppers on the PK Grill

Ingredients
  

  • Louie's P & R Italian Sausages we used 1 pkg of Italian & 1 pkg of Salameat
  • Heath Riles BBQ Garlic Butter Rub
  • Heath Riles BBQ Everyday Rub
  • 1 Red Bell Pepper sliced (we sliced into thin strips)
  • 2 Green Bell Peppers sliced (we sliced into thin strips)
  • 2 onions sliced (we sliced into thin slices)
  • 1 can of Beer of your choice we used original Budweiser
  • Olive Oil
  • Buns of your choice if you plan to make sandwiches

Instructions
 

  • Set grill up for 2 zone grilling, we used our PK for this cook.
  • Remove sausages from package, poke holes in sausages.
  • Place cast iron skillet on the hot side of the grill, oil with Olive Oil. Add sliced peppers and onions.
  • Season peppers and onions with Garlic Butter Rub and Everyday Rub.
  • Allow vegetables to sauté for approximately 5 minutes.
  • Add approximately 16 oz of Beer to the peppers and onions.
  • Add sausages on top of onion & pepper mixture in skillet and season with more Garlic Butter Rub and Everyday Rub. Allow to cook for approximately 15 minutes.
  • Turn sausages approximately halfway though (7-8 minutes).
  • Move skillet to the cooler side of the grill.
  • Remove sausages from skillet and place on the hot side of the grill to get some char.
  • Once you have as much char on your sausages as you would like, remove all items from the grill.
  • Make Italian Sausage & Pepper Sandwiches to your liking!!

Double Garlic Bone-In Ribeye

Double Garlic Bone-In Ribeye is a super easy recipe that packs a ton of flavor. We cooked these steaks on the PL Grill using my Garlic Butter and Garlic Jalapeno Rubs.

  • Get PK Grill set up for a 2 zone fire. We used Royal Oak Charcoal and GrillGrates. At the start of the cook, our GrillGrates are around 500º.
  • Coat steaks with Olive Oil to act as a binder.
  • Season steaks with Heath Riles BBQ Garlic Jalapeño Rub and then Heath Riles BBQ Garlic Butter Rub.
  • Spray GrillGrates with oil before cooking steaks, once grates are hot.
  • Place steaks on grates and allow to cook for 1 minute and 30 seconds, spin the steak at this point if you are trying to achieve good looking grill marks. Cook for another 1 minute and 30 seconds. This is a total cook time of 3 minutes on this side.
  • Flip the steak to the other side and repeat step #5.
  • Once your grill marks are in place, move your steaks to the cool zone of the fire and allow to finish cooking. Our steaks were 106º-110º at the time of moving them over.
  • We cooked our steaks to an internal temperature of approximately 120º for a medium rare. Remove from grill once desired temperature is reached.
  • Place 2 pads of salted butter on top of each steak. Cover with foil and allow to rest for approximately 10 minutes!

Maple Bourbon Glazed Ham

This recipe is for a Maple Bourbon Glazed Cheshire Farms Spiral Cut Ham using our Sweet BBQ Rub and we cooked this on the PK Grill. This recipe is easy to follow along with and uses some of our signature flavors.

Materials

Maple Bourbon Glaze

  • 1/2 cup Maple Syrup
  • 1/2 cup Blue Note Bourbon
  • 1/4 cup Brown Sugar
  • 2 tbs Butter
  • 1/3 cup Orange Juice

Ham Ingredients

Instructions

  • Get PK Grill or any grill of choice ready for 2 zone cooking. Our temp was about 300º. We used Royal Oak Charcoal and Blue Note Bourbon Smoking Chips (coming out soon).
  • Apply binder to ham, we used Dijon Mustard. Once binder is on, cover with Heath Riles BBQ Sweet BBQ Rub.
  • Place on small cooking rack if you wish and put on the grill.
  • Insert ChefAlarm in center and set to 125º.
  • Once ham reaches 125º, apply glaze. To make the glaze, combine all ingredients and reduce to a syrup like consistency.
  • Once ham reaches 140º-145º, remove from grill.

Cedar Plank Catfish | PK Grill | Heath Riles

Cedar Plank Catfish on the PK Grill

  • Soak cedar planks for at least 1 hour in water, we suggest an hour and a half if you can.
  • Get grill going to reach approximately 400º-425º.
  • Coat the side of the cedar plank you are putting the fish on with olive oil.
  • Place catfish on cedar plank. Coat catfish with olive oil. Season catfish with Heath Riles BBQ Garlic Butter Rub and then Heath Riles BBQ Chicken Rub (yes, chicken rub). Repeat on other side of catfish.
  • Place cedar plank catfish on the grill and cook for 10 minutes before checking. Start to check for an internal temperature of 145º. Once internal temperature is reached, remove cedar plank catfish from the grill.
  • Serve with your favorite vegetables and rice for a tasty meal! Enjoy!

Australian Wagyu NY Strip | PK Grill

  • Set up PK Grill for a 2 zone fire (or any charcoal grill).
  • Coat steaks with olive oil.
  • Season steaks with Heath Riles BBQ Everyday Rub & Heath Riles BBQ Beef Rub.
  • Season with black pepper if you choose.
  • Allow steaks to sit for 10 minutes with the rub on them.
  • Start the steaks on the cool side of the grill to reverse sear. Sear steaks and then move back to the cool side to finish off to an internal temperature of 125º-130º.
  • Finish steaks off with Sea Salt.

Bone-In Prime Rib Roast | PK Grill

FOR INJECTION

  • 1/2 cup Soy Sauce
  • 1/3 cup Worcestershire Sauce
  • 1.5 tablespoon Au Jus Base
  • 1 3/4 cup Beef Broth
  • 2 teaspoons of Heath Riles BBQ Everyday Rub

Instructions
 

  • Take Prime Rib Roast out of refrigerator 2 hours before seasoning / cooking to allow it to become ambient.
  • Get PK Grill (or any grill) ready for a 2 zone fire.
  • Place vegetables (onion, carrots & celery) in pan.
  • Inject prime rib roast in grid-like pattern.
  • Add remaining injection to vegetables and red wine.
  • Coat Prime Rib Roast in Olive Oil.
  • Season Prime Rib Roast with Heath Riles BBQ Beef Rub and then Killer Hogs TX Brisket Rub.
  • Place Prime Rib Roast on bed of vegetables and place on the grill.
  • Use Chef's Alarm to cook to an internal temperature of 120º.

BBQ Pork Steaks | PK Grill

BBQ Pork Steaks on the PK 360 Grill

  • Set up charcoal grill for 2 zone grilling.
  • Use olive oil on pork steaks (or other binder). Season with Heath Riles BBQ Garlic Jalapeño Rub and Heath Riles BBQ Sweet Rub on both sides.
  • Place pork steaks on hot side of the grill and cook for 2 and a half minutes. Rotate pork steaks for grill marks and cook for another 2 and a half minutes. (Total of 5 minutes)
  • After 5 minutes, flip pork steak over and cook for 2 and a half minutes. Go ahead and sauce the cooked side of the pork steak with Heath Riles BBQ Sweet Sauce. Rotate pork steaks for grill marks and cook for another 2 and a half minutes. (Total of 5 minutes)
  • Move steaks to cooler side of the grill and sauce the unsauced side. Cook for approximately 15-20 minutes to reach an internal temperature of at least 170º (or less if you prefer).
  • Enjoy!
  • **NOTE: Thinner pork steaks will need less cooking time.

Ribeye Steaks | PK Grill

Steaks are something that don't need to be complicated, in this recipe we are doing simple really well with our Ribeye Steaks on the PK Grill.

  • Trim any excess fat off of ribeyes if you wish
  • Apply olive oil to outside of ribeyes as a binder (both sides)
  • Apply a light coat of Heath Riles BBQ Garlic Jalapeño Rub (both sides)
  • Apply a light to medium coat of Heath Riles BBQ Beef Rub (both sides, we also used this on the edges of the steaks)
  • Place steaks back in the fridge for approximately 20 minutes while you light your grill and bring your GrillGrates up to temp. (Remember we put all of our our hot charcoal on 1 side of the grill in order to be able to move our steaks over and let them finish on indirect heat)
  • Spray GrillGrates with oil once they are approximately 550º-600º
  • Apply a light coat of Heath Riles BBQ Pecan Rub before placing steaks on the grill
  • Place steaks on at an angle and mash them down good against the grates, set your timer for 2 minutes. Once timer goes off, rotate your steaks at a 45-90º angle to achieve diamond marks. Set time for 2 minutes again. (4 minutes total for each side of the steak)
  • Flip steaks and repeat step 8. Once you have cooked for a total of 8 minutes (4 minutes on each side) check your internal temperature.
  • Move steaks to cooler side of the grill and let them cook to your desired doneness. We went to 125º and took our steaks off once this temperature was reached.
  • Allow steaks to rest for 10 minutes before cutting into them and eating! (This part is hard, we know!)

Sweet & Spicy Grilled Pork Tenderloin

This Sweet and Spicy Grilled Pork Tenderloin that we cooked on the PK Grill using our Garlic Jalapeno and Garlic Butter Rubs, then we topped it off with our Sweet BBQ Sauce.

  • Set up PK Grill (or grill of choice) for 2 zone grilling.
  • Rub pork tenderloin with a light coat of olive oil.
  • Season tenderloin with Heath Riles BBQ Garlic Jalapeño Rub.
  • Season tenderloin with Sully's Grill Dust.
  • Place tenderloin on your grill, cook for a total of 2 minutes and then spin, cook for another 2 minutes. Flip tenderloin and repeat for a total of 8 minutes for both sides.
  • Move tenderloin to cool zone on grill.
  • Place Chef's Alarm in tenderloin and cook to 130º.
  • Glaze with peach glaze (recipe above).
  • Once glazed, cook to 145º to set glaze.
  • Rest for 5 minutes before slicing.

This New Orleans Style BBQ Shrimp is absolutely fantastic, even better it is a quick meal that will certainly impress the crowd. We used our signature spices on the PK Grill.

  • Parsley
  • Chopped Green Onions
  • White Rice
  • Sliced French Bread

Instructions
 

  • Place butter in cast iron skillet on the hot grill, once melted add onions and peppers. Once onions and peppers are caramelized, add other ingredients to skillet.
  • Grill shrimp for 30 seconds on each side and then add to your sauce mixture. Cook an additional 5-10 minutes until shrimp is done and sauce thickens. Garnish with parsley and green chopped green onions if desired. Serve over a bed of white rice with toasted French bread.
